ok so starch and glycogen are good storage molecules. starch is a polymer of alpha-glucose molecules. it has two components, namely amylose and amylopectin. amylose is a unbranched polymer of alpha-glucose molecules. each amylose chain is coil into a helix. its glucose residues are linked by alpha 1,4 glycosidic bonds wif its hydrophilic hydroxyl grps projecting into the interior of the helix. hence there are no cross linking between each amylose chain. amylopectin is the branched component of the amylose chain and its glucose residues are linked by alpha 1,4 glycosidic bonds. the branch points are linked by alpha 1,6 glycosidic bonds. it is also coiled into a helix like amylose wif its hydroxyl grps projecting into the helix so there are no cross linking.
glycogen has a structure that is very similar to the amylopectin component of the starch juz tat it has more branching. it is a polymer is alpha glucose molecules and it is linked by alpha 1,4 glycosidic bonds and its branch points are linked by alpha 1,6 glycosidic bonds. wif hydrophilic hydroxyl groups projecting into the helix as well.
they are good storage molecules as
(1) they are insoluble in water (the hydroxyl are in the helix and cant form bonds wif water =>insoluble.) and can be stored in large quantities w/o having great effect on the water potential of the cells and prevented frm diffusing out frm cells.
(2)due to the hydroxyl grps withis the helices, the chains cannot cross link to form a big bundle. they are folded into a compact shape. hence large amts of them can be stored in a cell.
(3)without extensive cross linking, the moleqs can be hydrolysed easily to form monosaccharides.
